Vegan Omelet/Savory Pancake:
Ingredients

- 1/2 white onion
- 3 oz. mushrooms
- Knob of vegan butter
- 2 cups chickpea flour
- 1/2 tsp baking soda
- 1/2 tsp black salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp paprika
- 2 tbsp nutritional yeast
- (optional) dash of red pepper flakes
- 1/4 tsp black pepper
- 1 cup water
- 1/2 tbsp oil (I used avocado)

Directions

1. Start by preparing the carmelized onions and mushrooms. Over medium heat in a small skillet, heat up butter. Add in sliced onions and mushrooms and cook for 13-15 min. or until onions start to turn a golden color and mushrooms have lost its moisture. Set aside once done.

2. In a large mixing bowl, whisk together all dry ingredients. Gradually pour in water while stirring. Consistency should resemble a pancake batter.

3. Heat a large skillet over medium heat and grease with oil. Pour in about 1 cup of batter into center of pan and spread around into a slightly thin circle with the back of a spoon. Cook for 2-3 min. on each side or until center starts to bubble and edges become matte.

4. Top with carmelized onions, avocado, fresh rosemary, cracked pepper, and sriracha.

Banana Pancakes:
Ingredients

- 1 + 2 tbsp cup whole wheat flour (sub oat flour if gluten-free)
- 1 tbsp baking powder
- 1/4 tsp salt
- 2 tbsp flax seed meal
- 1 1/2 cups almond milk
- 1 ripe banana

Directions

1. Whisk together all dry ingredients in a large mixing bowl. In a separate smaller mixing bowl, mash the ripe banana until smooth then add in milk. Whisk to combine. Stir in wet mixture into dry.

2. Heat a large skillet over medium heat. Pour in 1/4 cup of batter and cook until edges become matte and it starts to bubble in the center.

3. Top with desired toppings such as, sliced banana, sliced strawberries, buckwheat groats, cocoa nibs, vegan whipped cream or vanilla bean cream (https://healthienut.wordpress.com/201...), and maple syrup.

Acai Bowl:
Ingredients

- 3-4 frozen bananas
- 1/2 cup frozen berries
- 1/4 cup frozen mango
- 1 tbsp freeze-dried acai powder
- 1 tbsp maca powder

Directions -

1. Blend all ingredients in a high-speed blender until thick and creamy.
2. Top with desired toppings such as: fresh fruit, homemade granola, shredded coconut, buckwheat groats, and hemp seeds.
